Syrup is our passion. It takes a lot of work, but it’s well worth it when the kids run to the table.
A whole lot of sap
It takes around 40 gallons of sap to make one gallon of syrup. That’s a lot of maple trees!
Creating Burgess Maple Syrup is a laborious, but we love every step of it.
It all starts with our beautiful maples. During the spring months, we tap tree after tree. In the time honored tradition, we daily collected sap from buckets. Now, long tubes spread across the maple woods, and with the help of gravity, move the sap from the trees to a large tank.
Then it’s time for the sugarhouse.
The collected sap goes through a process to remove excess water (This leftover water is never wasted. It’s recycled and used to clean our equipment.) The remaining sap is boiled in the large evaporator, fondly referred to as the spaceship. At this point, the sap has been fully processed into syrup.
And after that, it’s time for the filter press, the bottler, and finally, your table.
